Guest Chef - Eric Chabot

Eric and his wife Marie Antoinette own and run the beautiful Chateau Clement at Vals-les Bans in the Ardeche region of France. Eric is a qualified pastry chef and Marie Antoinette comes from a family of hoteliers so they really know how to look after their guests. Not knowing what to expect, and with the building being so grand we worried it might be quite formal and stuffy. The reality could not have been further from this. It was relaxed and casual and both Marie Antoinette and Eric were charming and friendly. After a wonderful three days in the chateau and it was hard to leave! For more information about the chateau see their website at www.chateauclement.com. Eric guided Brian and I through a chestnut cooking class and had us piping macarons and glazing confit chestnuts. It was a great experience. Here's Eric's special recipe for Biscuit Coulant a la Chataigne which is more like a chestnut pudding with a melting chestnut centre. Back to Blog
